Job Description




Is primarily responsible for the efficient daily operation of the bottling and Food Service Training Program for trainees.  Assists the Management team in providing training and evaluation to trainees, food preparation, production and inventory control, sanitation and quality control, and safety and staff training.






Food Management:


  1. Prepare bottler for processing products for distribution to customers.
  2. Receive product orders from Office staff to complete customer orders.
  3. Prepare fruit cup machine for fruit processing.
  4. Prepare and cook foods of all types and follow all proper cooking procedures and guidelines.
  5. Maintain inventories of food supplies and request supplies needed with Kitchen Manager.
  6. Demonstrate proper use of ingredients and supplies required to prepare a recipe.
  7. Supervise the operations of the kitchen, dining hall including serving line.
  8. Oversee the quality and consistency of bottled products to meet the customer’s expectation.
  9. Set daily production goals for bottling needs per customer’s request to maximize productivity.
  10. May on occasion be asked to cook, deliver and/or assist in other kitchen assignments.


Training and Evaluation of Trainees/Staff:


  1. Assign duties, responsibilities, and work stations to trainees/staff in accordance with work requirements.
  2. Train trainees/staff the fundamentals of food service, i.e. preparation techniques, food quality, sanitation and hygiene, and safety procedures.
  3. Evaluate and correct trainees/staff on proper work procedures in order to ensure quality food standards and service.
  4. Train trainees/Staff on how to operate, clean, disassemble, and assemble bottling machine.
  5. Train trainees/ Staff on how to set up cup machine for product to be used
  6. Make recommendations for trainee/staff training. 
  7. Evaluate and train assigned trainees in pre-vocational skills, workplace attitudes and behaviors.
  8. Demonstrate Lanakila Pacific’s values of teamwork, excellence, achievement, motivation and Lanakila in all personal interactions with others.




Documentation and Record Keeping:


  1. Assist with conducting time studies to accurately determine hourly wage.
  2. Maintain/update trainees’ attendance records.
  3. Document all safety training and sanitation inspection.


Sanitation and Equipment Usage:


  1. Demonstrate proper equipment usage and proper safety procedures to trainees and staff.
  2. Enforce safety and sanitation regulations of the kitchen facility to meet government standards.
  3. Inspect and upkeep equipment and utensils so that they remain in good working condition.
  4. Maintain inventory of utensils and equipment and report any deficiency.
  5. Maintain proper storage of food and supplies to meet quality standards.








  1. Associate’s degree in Food Service/Restaurant Management or related field is preferred with a minimum of one year of successful work experience in food service/restaurant operations or;
  2. High School diploma or equivalent with three to four years work experience in food service/restaurant operations, vocational training, rehabilitation or related human services may be substituted on a case by case basis for education and experience.



  1. Knowledgeable in state and/or federal nutritional guidelines preferred; knowledgeable in healthy or vegetarian diet is a plus.
  2. Valid driver’s license and clean driver’s abstract.
