We are looking for a skilled Dietary Manager to oversee daily kitchen operations, including meal preparation, staff supervision, inventory management, and coordination with other departments to ensure high-quality, compliant food service. Ensure meals meet dietary needs and regulatory standards while maintaining proper documentation, sanitation, and safety protocols. Manage budgeting, menu planning with a Registered Dietitian, and special meal accommodations for residents and external programs.
Oversee daily kitchen operations, including meal prep and service for residents and external programs.
Ensure meals meet dietary needs, physician-ordered diets, and individual preferences.
Monitor food safety, sanitation, and quality standards.
Maintain accurate documentation for food safety and compliance.
Recruit, train, supervise, and evaluate kitchen staff (cooks, dietary aides, coordinators).
Manage staff schedules to ensure adequate coverage.
Serve as primary liaison between the kitchen and other departments.
Collaborate regularly with Nursing, Activities, and other teams to support resident well-being.
Ensure compliance with Hawaii OHCA, DOH Food Safety Code, and long-term care dietary standards.
Prepare for and support inspections and audits.
Plan and manage kitchen budget in coordination with COO.
Oversee purchasing and storage of food; minimize waste and spoilage.
Implement inventory control and cost-saving practices.
Maintain kitchen equipment and related logs.
Collaborate with Registered Dietitian to create menus that meet guidelines and preferences.
Plan special event and holiday menus.
Oversee meals for residents and private deliveries with dietary restrictions.
Associate degree in culinary arts or 5+ years of related experience.
3+ years in cafeteria or restaurant operations (5+ preferred).
3+ years of supervisory or management experience.
Current Food Safety Certification (e.g., ServSafe or equivalent).
Willingness to work evenings, weekends, and holidays.
Ability to lift/move up to 50 pounds.
Regularly stand for long periods; frequent hand use.
Able to kneel and follow proper lifting procedures.
