Job Description

The Director of Food Services is responsible for the overall efficient operation of the Lanakila Kitchen and the Hickam Hale Aina Dining Facility as contracted.  Responsible for but not limited to their operation, evaluation, training, food safety and sanitation, production, contract negotiations, sales and program development, resource management, financial and personnel management.

 

 

ESSENTIAL DUTIES AND RESPONSIBILITIES:

Recruits personnel, coordinates training, evaluates, and motivates to maintain a high level of performance.  Approves hiring, promotion, transfers, and any disciplinary actions including discharge if warranted.  Provides direct and indirect supervision.

Ensure compliance with nutritional, safety, sanitation and quality standards, federal, state and local regulatory requirements. Develops policies and procedures and develops quality control programs to ensure compliance.

Ensures that the facilities are properly inspected and certified under Dept of Health and any other regulatory agency. 

Responsible for the pricing of menus and assuring appropriate benchmark cost and gross margin objectives are being met.

Negotiates and manages contracts to optimize profit margins.  Actively seeks new business opportunities.

Prepares and monitors the Food Service budget and actively makes adjustments to ensure the department is meeting budget and forecasts.

Performs quality improvement reviews to identify opportunities for improved customer service, food production, or food service.

Oversees the purchasing to ensure items are purchased at the best possible price and that proper security safeguards are established for cash, inventory, equipment and vehicles.

Works with the Manager to determine the monthly menu for Lanakila Kitchen.  Assures menus and recipes are in compliance to CACFP and RDA as required by contractual obligations.

Sets a good example for all workers and functions as an advocate for persons with disabilities.

Perform other duties as required.

Leadership:  ability to monitor/assess performance of self, other individuals, or processes and make improvements or take corrective actions as necessary; ability to use good judgment and initiative when making decisions; ability to perform under pressure and coordinate and manage support staff, resources, curricula, etc. Work under minimal supervision and direction.

Technology:  proficient to intermediate skills in Microsoft office products and standard office equipment and tools to complete job requirements, submit reports, and to eliminate administrative tasks empower employees, and meet other needs of the organization.

 

 

MINIMUM QUALIFICATIONS:

Bachelor degree in Business Administration, Food Service or related field. 

Minimum of 3 years related experience in cafeteria/restaurant operation or related.

Minimum of 5 years of supervisory experience required.

ServSafe Certification/training not required but preferred.

Knowledge of USDA Child and Adult Care Food Program and Recommended Dietary Allowance is preferred.

Valid driver’s license and a clean driving record are required.

Must meet all health requirements, including TB.

Must be able to obtain military installation base pass to access military installations.
