Job Title:              Sushi Prep Cook

Reports To:         Sushi Chef

Job Overview:     

The Sushi Prep Cook assists the Sushi Chef in the preparation and cooking of a variety of foods that require only a short preparation time; and performs a number of kitchen activities, storing food and non-food supplies, and monitoring par stock. Foods may include preparation of fresh fish, sauces, and hand roll sushi. Ample knife skills and basic fish cutting knowledge required.
Responsibilities typically include:

  • Ensure the freshness of food and ingredients.
  • Weigh, measure, mix, and cook ingredients/sauces according to recipes.
  • Use a variety of kitchen equipment including stove top, oven, fryer, slicers, grinders, and blenders.
  • Chop, boil, bake, saute, and fry poultry, fish, vegetables, and other foods.
  • Arrange and garnish dishes.
  • Monitor par stock and place orders when there are shortages.
  • Store and properly handle raw or prepared foods and non-food supplies that is consistent with local health department guidelines.
  • Follow proper food handling techniques and coordinate the use of time, material, and equipment to avoid waste and unnecessary expense.
  • Clean and sanitize production equipment, work surfaces, and kitchen according to cleaning schedules and procedures.
  • Maintain acceptable standards of personal hygiene.
  • Comply with department’s dress code.
  • Follow safety regulations, reporting injuries or any unsafe conditions and work practices to the supervisor.
  • Emphasize fast service and quick food preparation, often working on several orders at the same time.
