Lead Cook
DEPARTMENT: Kitchen JOB TITLE: Lead Cook
REPORTS TO: Executive Chef & Sous Chef
JOB TYPE: Hourly/Non-Exempt
POSITION SUMMARY
The Lead Cook is an advanced culinary position responsible for supporting daily kitchen operations while maintaining high standards of food quality, consistency, and teamwork. Working alongside the Sous Chef, the Lead Cook provides guidance to Line Cooks during preparation and service, helps keep the kitchen running smoothly, and serves as a reliable on-shift resource for the culinary team.
This role is hands-on and production-focused, with added responsibility for coordination, communication, and supporting less-experienced cooks.
ESSENTIAL DUTIES & RESPONSIBILITIES
- Prepare and execute menu items according to Club recipes, portion standards, and presentation guidelines.
- Lead assigned stations during service and assist with coordinating timing and plating across the line.
- Support and guide line Cooks during prep and service, offering direction and assistance as needed.
- Assist with training new kitchen staff on recipes, station setup, and kitchen procedures.
- Set up, maintain, and break down workstations to ensure service readiness.
- Monitor product levels and notify the Sous Chef of shortages or prep needs.
- Requisition food and supplies required for service and preparation.
- Ensure proper food storage, labeling, dating, and rotation.
- Maintain cleanliness and sanitation of assigned areas, equipment, and tools.
- Adhere to all state and local health, safety, and food-handling regulations.
- Maintain a professional appearance and follow personal hygiene standards.
- Assist with special events, banquets, and club functions as assigned.
- Attend required staff meetings and trainings.
- Perform additional duties as assigned by the Sous Chef or Executive Chef.
PHYSICAL DEMANDS & WORK ENVIRONMENT:
- Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch, and twist or reach.
- Push, pull, or lift to 50 pounds.
- Continuous repetitive motions.
- Work in a hot, humid, and noisy environment
