Job Description

Line Cook with full medical – Kilauea Lodge in Volcano Village

The Line/Prep Cook’s primary responsibility is to work alongside the Chefs and cooks to ensure product quality and work harmoniously with others within the organization of the kitchen.

Core Responsibilities:

The core responsibility of the Line/Prep Cook is to ensure that all food on property is of high quality and meets all food safety requirements. A list of specific duties is as follows:

· Complete daily prep and cleaning checklists with kitchen team

· Organize and cook employee meals, daily soups, sauces, basic butchering

· Ability to follow recipes and supervisor directions, and to work independently

· Cooks food to order per appropriate method (grill, sautee, fry, etc), with ability to rotate through all line stations

· Cleans and sanitizes all stations at the end of shift

· Receive deliveries, stock shelving and rotate all ingredients

· Knowledge of organization standards for all raw ingredients and prepared food

· Communicate effectively with managers and employees

Knowledge and Skill Requirements:

· Basic knowledge of all aspects of restaurant kitchen operations

· Basic knife skills

Additional Requirements:

· Should be able to work alone and in a team environment

· Needs to maintain a flexible schedule (including nights and weekends) and have reliable transportation

· Should be able to communicate effectively

· Excellent organizational and time management skills

· Local Health Department and Food Safety Knowledge

· Familiar with corresponding State and Federal Labor Laws

· Proof of eligibility to work in the United States
