Job Description

Primary function of Pantry 1 is to prepare salads, fruits, dressings, cold meats, fish items, camapes, cold hors d'oeuvres, apppetizers and other food items prepared in Garde Manger and on the Pantry station in the Restaurants, or Main Kitchen, according to recipes and the high standards of culinary excellence at the Hilton Waikoloa Village.

What will I be doing?
     * Prepare all menu food items according to standard recipes and as specified in the B.E.O., to ensure consistency of product. Prepares specialty canapes, cold hors d'oeuvres, salad dressings, sauces, pate's, galantines, cold buffet platters and presentations.
     * Visually inspect, select and use only food items of the hightest standard in the preparation of all menu items.
     * Check and control the proper storage of product, (first in, first out), checks expiration dates especially in highly priced and highly perishable food items, rotate inventory. Monitor covering, labeling and dating of food, using of proper containers to protect against wast and spoilage.
     * Keep all refrigeration, equipment, and storage and working areas in clean, working condition in order to comply with food safety and sanitation standards, proper us of sanitizing solution.
     * Prepare daily store room requisitions, according to the departmental needs and the requirements of the Banquet B.E.O.
     * Orgnaize mise en place for the next days preparation.
     * Ensures HACCP complicance through temperature monitoring, good food safety and sanitation practices and maintaining of the HACCP log, hot and cold holding.
