Job Description

Position: Assistant General Manager FLSA: Nonexempt

Reports To: Area Director Date Reviewed: June 2021

Position Purpose

The Assistant General Manager coordinates all activities in the restaurant in order to ensure exceptional guest satisfaction in accordance with the Company Standard. Additionally, the Assistant General Manager is responsible for controlling the restaurant’s costs, ensuring profitability, and developing team managers.

Duties and Responsibilities

o Oversees all service area and kitchen activities. Supervises managers and hourly team members in accordance with Company operating policies and standards.

o Works with team members to ensure impeccable food presentation and proper food handling procedures. Follows the recipe for all food items.

o Reviews all bar, host, server and kitchen team member schedules and supervises managers to ensure daily schedules are in line with prescribed shift staffing pars.

o Directs the hiring, assignment, training, motivation, evaluation and termination of personnel.

o Inspects dining room, food receiving, preparation, production, and storage areas to ensure that health and safety regulations are adhered to at all times.

o Reviews financial information such as sales and costs and creates and monitors budgets to ensure an efficient operation. Maintains a system of cost controls through purchasing and sales.

o Ensures that expenditures stay within budget limitations and immediately takes action to correct any P&L line item deviation. Executes the general responsibilities necessary to minimize operating costs.

o Maintains records of management and team member performance and restaurant costs.

o Handles guest complaints. Investigates and resolves food quality and service complaints following service recovery procedures.

o Frequently meets with food production, dining room, bar and other management personnel to plan guest service activities, special events, share information, etc.

o Estimates food and beverage needs and requisitions or purchases produce, meats, poultry, fish and seafood, supplies, beverages, and equipment.

o Receives and checks incoming orders to ensure they adhere to specifications.

o Supervises weekly inventories and estimates and controls food and beverage costs.

o Supervises cleaning and maintenance of equipment and arranges for repairs, contracts and other services. Engages in preventive maintenance tactics to keep equipment and facilities clean, and in good working order.

o Ensures the development of subordinate Managers, and actively works to teach and coach

o Key hourly team members, Certified Trainers and New Restaurant Opening Trainers.

o Assists with the development of a marketing strategy and for implementing advertising and promotional campaigns.

Personal Appearance

The Assistant General Manager must be well groomed and neatly attired according to the prescribed apparel guidelines.

Physical Actions

The Assistant General Manager will be required to engage in the following physical action for up to a 10–12-hour shift and must have the stamina to work a minimum of 50 to 60 hours a week.

The Assistant General Manager is required to carry food and beverage orders weighing up to fifty pounds. The Assistant General Manager will need to carry soiled plates and glassware weighing up to 20 pounds. The Assistant General Manager will need to retrieve supplies weighing up to 25 pounds from storage shelves.

Environmental Exposure

Works in the climate controlled environment of the dining rooms, but will be required to walk in and out of the kitchen resulting in exposure to heat and humidity. Assistant General Managers may be working on the patio (if applicable) or supervising outside activities that may cause exposure to varying weather conditions. The Assistant General Manager works with cleaning chemicals. The Assistant General Manager engages in extensive verbal interaction with guests and team members and is exposed to potentially frustrating situations. The Assistant General Manager must work well with limited supervision.
